Sweet- sour white fungus soup

As I talked in my previous post Oh you Sundaywant to share a recipe for sweet-sour white fungus soup. It’s very easy to make, just need a few ingredients and you will have a homemade Asian kitchen soup!  This recipe we found at one Lithuanian food blog. I will add for my Lithuanian readers the link bellow! 

For a lot of soup  (maybe for 8-10 people) you will need:

  • 3 liters of chicken stock (made by yourself)
  • 50 grams of white fungus
  • 100 milliliters of rice vinegar
  • 90 grams of sugar
  • half t.s. grounded white and black pepper
  • a dash of sesame oil
  • about 400 grams of chicken fillet
  • 2-3 tablespoons cornstarch (we forgot to add this, but it tasted still very good!)
  • fresh cucumber

 

Make the chicken stock and see bellow of the next steps. 🙂

Firstly, you need to pour boiling water on fungus and leave it for 20 minutes. It will soak, and you will have a lot of them.  After 20 minutes, drain fungus and chop it into small pieces. Don’t forget to remove the yellow part.

Next is to chop the chicken into small pieces as well. The pot with chicken broth place up on the stove and when it will be boiling add the chopped fungus.

Roll the chicken pieces in the cornstarch and add to the boiling soup. Next step is to add the rice vinegar, sugar, and peppers.

Stir it and leave it for a few minutes. If you will see that some peppers, rice vinegar or anything else is missing- add it.  Your  goal is to have a sweet-sour taste 🙂

Add a dash of sesame oil and on a low flame leave the soup to stand for a few minutes.

And it’s almost done!! Pour the soup, add the sliced cucumbers and you are ready to serve it!
